Smoky paprika halloumi smash toast
Need an egg break? There's 22g protein in 2 slices of thick halloumi vs 13g in 2 eggs โ though you can add a boiled egg on top if you're extra hungry.
๐งบ Ingredients
- 2 slices sourdough
- 1/2 avocado
- Halloumi
- Smoked paprika, to taste
- 1/2 lemon
- Olive oil
- Chilli flakes
- A handful of rocket
- Salt
- Chopped parsley
- Pickled red onions
๐ฉโ๐ณ Method
- Pat the halloumi dry, coat with olive oil and dust both sides with smoked paprika, chilli flakes and black pepper.
- Pan fry 1-2 mins each side until golden and crisp.
- Toast the sourdough.
- Smash the avo with lemon juice, olive oil, salt, pepper and chilli flakes.
- Layer: toast, smashed avo, dressed rocket and the smoky paprika halloumi.
- Finish with olive oil, lemon, chilli flakes, pickled red onions, parsley and salt.
