Warm Sweet Potato & Salmon Glow Bowl

- 1 sweet potato, cubed
- 1 salmon fillet
- A couple of handfuls baby spinach
- A handful of cherry tomatoes
- 1/2 avocado
- Olive oil, lemon, salt

- Cube the sweet potato, par-boil a few minutes until it just starts to soften, then drain and air fry around 17 minutes until crispy.
- Air fry the salmon for 7 minutes.
- Sautรฉ the spinach in a little olive oil until wilted.
- Add the cherry tomatoes to the pan and cook until soft and starting to burst.
- Slice half an avocado.
- Plate it all up with a squeeze of lemon over the salmon.
