Warm Sweet Potato & Salmon Glow Bowl

๐Ÿงบ Ingredients

  • 1 sweet potato, cubed
  • 1 salmon fillet
  • A couple of handfuls baby spinach
  • A handful of cherry tomatoes
  • 1/2 avocado
  • Olive oil, lemon, salt

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Cube the sweet potato, par-boil a few minutes until it just starts to soften, then drain and air fry around 17 minutes until crispy.
  2. Air fry the salmon for 7 minutes.
  3. Sautรฉ the spinach in a little olive oil until wilted.
  4. Add the cherry tomatoes to the pan and cook until soft and starting to burst.
  5. Slice half an avocado.
  6. Plate it all up with a squeeze of lemon over the salmon.
