Thai Spicy Chicken Basil Stir Fry
My go-to when I want something super quick, tasty and high protein โ inspired by pad krapow gai, one of the best Thai street-food classics.
๐งบ Ingredients
- Jasmine rice, to serve
- 300-500g chicken mince (300g serves two)
- A heaped handful of Thai basil (or regular basil)
- Half an onion, sliced into thin half-moons
- 1 cup green beans, chopped
- 1 egg per serve, fried sunny side up
- Sauce: 2 tbsp soy sauce, 1 tbsp dark soy, 1 tbsp fish sauce
- 3 garlic cloves, finely chopped
- 3 birds-eye chillies, finely chopped (adjust to taste)
๐ฉโ๐ณ Method
- Get a wok or large frying pan screaming hot, then add a neutral oil.
- Add the chicken mince and brown it off, breaking it up as it cooks through.
- Toss in the onion and green beans and stir fry until tender (blanch the beans first if using a frying pan).
- Pour in the sauce, toss to coat, then add the Thai basil and stir until it just wilts. Turn off the heat.
- Fry an egg sunny side up in a separate pan.
- Serve the chicken beside a scoop of jasmine rice, top the rice with the crispy egg, and enjoy.
