๐Ÿฝ Dinnerโฑ 20 min๐Ÿ‘ฅ serves 2
high proteinquickThai

My go-to when I want something super quick, tasty and high protein โ€” inspired by pad krapow gai, one of the best Thai street-food classics.

๐Ÿงบ Ingredients

  • Jasmine rice, to serve
  • 300-500g chicken mince (300g serves two)
  • A heaped handful of Thai basil (or regular basil)
  • Half an onion, sliced into thin half-moons
  • 1 cup green beans, chopped
  • 1 egg per serve, fried sunny side up
  • Sauce: 2 tbsp soy sauce, 1 tbsp dark soy, 1 tbsp fish sauce
  • 3 garlic cloves, finely chopped
  • 3 birds-eye chillies, finely chopped (adjust to taste)

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Get a wok or large frying pan screaming hot, then add a neutral oil.
  2. Add the chicken mince and brown it off, breaking it up as it cooks through.
  3. Toss in the onion and green beans and stir fry until tender (blanch the beans first if using a frying pan).
  4. Pour in the sauce, toss to coat, then add the Thai basil and stir until it just wilts. Turn off the heat.
  5. Fry an egg sunny side up in a separate pan.
  6. Serve the chicken beside a scoop of jasmine rice, top the rice with the crispy egg, and enjoy.
