Stuffed Eggplant Boats
Eggplant is so underrated โ its naturally dense, hearty texture gives you that carby comfort-food feel without the carbs.
๐งบ Ingredients
- 2 medium eggplants, halved and scored
- 400g lean beef mince
- 200ml tinned tomatoes or tomato pulpa
- 1 tbsp tomato paste
- 1 brown onion, finely diced
- 3 garlic cloves, minced
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 tsp sweet paprika
- 80g feta, crumbled
- Fresh parsley, to serve
๐ฉโ๐ณ Method
- Roast the scored eggplants at 200ยฐC for 35-40 minutes, until golden and very soft.
- Cook the mince with the onion, garlic, spices and tomato until thick and saucy.
- Fill the eggplant boats with the beef, crumble feta on top and return to the oven until the feta is just golden.
- Scatter with parsley and serve with whatever matches your palette or your goals.
