Stuffed Eggplant Boats

Eggplant is so underrated โ€” its naturally dense, hearty texture gives you that carby comfort-food feel without the carbs.

๐Ÿงบ Ingredients

  • 2 medium eggplants, halved and scored
  • 400g lean beef mince
  • 200ml tinned tomatoes or tomato pulpa
  • 1 tbsp tomato paste
  • 1 brown onion, finely diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp sweet paprika
  • 80g feta, crumbled
  • Fresh parsley, to serve

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Roast the scored eggplants at 200ยฐC for 35-40 minutes, until golden and very soft.
  2. Cook the mince with the onion, garlic, spices and tomato until thick and saucy.
  3. Fill the eggplant boats with the beef, crumble feta on top and return to the oven until the feta is just golden.
  4. Scatter with parsley and serve with whatever matches your palette or your goals.
