Southern Thai turmeric chicken aka Gai Yang Khamin
A recreation of a Southern Thai street-food staple, made in the air fryer with a salty, sour, sweet and spicy Nam Jim Jaew.
🧺 Ingredients
- 600g boneless chicken thighs
- 3 garlic cloves, crushed
- 1.5 tbsp fish sauce
- 1.5 tbsp oyster sauce
- 1.5 tsp ground turmeric
- 1/2 tsp white pepper
- 2 tbsp raw sugar
- 2 tbsp fish sauce (for the dipping sauce)
- 2 tbsp lime juice, about 1 lime (for the dipping sauce)
- 1 tbsp raw sugar (for the dipping sauce)
- 3 fresh chillies
- 1 tbsp chopped coriander
- Cucumber slices, to garnish
- Coriander, to garnish
- Jasmine rice, to serve
👩🍳 Method
- Coat the chicken thighs in the garlic, fish sauce, oyster sauce, turmeric, white pepper and raw sugar. Marinate for at least 3 hours or overnight.
- Air fry at 190°C for 6 minutes, flip and cook for another 6 minutes.
- Crisp for another 4 minutes at 200°C, until the edges are sticky and caramelised and the internal temperature reaches 75°C. A cast-iron pan also works.
- For the dipping sauce, stir the fish sauce, lime juice and raw sugar until the sugar fully dissolves.
- Stir through the chilli and coriander. Taste and balance until salty, sour, sweet and spicy.
- Serve with jasmine rice, cucumber and fresh coriander.
