Soft Baked Peanut Butter Protein Cookies
Perfect for when you're lazy, have minimal ingredients and need a little sweet pick-me-up. Roughly 8-9g protein per cookie.
๐งบ Ingredients
- 1/2 cup (128g) natural peanut butter, the runny kind
- 1 egg
- 1/4 cup (60ml) maple syrup
- 1 tsp vanilla extract
- 1/2 cup (50g) vanilla protein powder (ideally whey)
- 1/2 cup (48g) almond flour
- 1/2 tsp baking soda
- Pinch of salt (skip if your peanut butter is salted)
- 1/3 cup (60g) chocolate chips
๐ฉโ๐ณ Method
- Mix the peanut butter, egg, maple syrup and vanilla until smooth.
- Add the protein powder, almond flour, baking soda and salt. Stir just until it comes together โ overmixing makes them cakey. You want a soft playdough that holds when squeezed.
- Fold in the chocolate chips.
- Chill the dough for 15 minutes so the maple doesn't make them spread too much.
- Heat the oven to 175ยฐC (350ยฐF) and line a tray. Roll into balls, space them out and press each one down only slightly.
- Bake 9-11 minutes. They'll still look underdone โ take them out and leave them on the tray 10 minutes to set, and they turn out perfectly fudgey.
