Soft Baked Peanut Butter Protein Cookies

Perfect for when you're lazy, have minimal ingredients and need a little sweet pick-me-up. Roughly 8-9g protein per cookie.

🧺 Ingredients

  • 1/2 cup (128g) natural peanut butter, the runny kind
  • 1 egg
  • 1/4 cup (60ml) maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup (50g) vanilla protein powder (ideally whey)
  • 1/2 cup (48g) almond flour
  • 1/2 tsp baking soda
  • Pinch of salt (skip if your peanut butter is salted)
  • 1/3 cup (60g) chocolate chips

👩‍🍳 Method

  1. Mix the peanut butter, egg, maple syrup and vanilla until smooth.
  2. Add the protein powder, almond flour, baking soda and salt. Stir just until it comes together. Overmixing makes them cakey. You want a soft playdough that holds when squeezed.
  3. Fold in the chocolate chips.
  4. Chill the dough for 15 minutes so the maple doesn't make them spread too much.
  5. Heat the oven to 175°C (350°F) and line a tray. Roll into balls, space them out and press each one down only slightly.
  6. Bake 9-11 minutes. They'll still look underdone. Take them out and leave them on the tray 10 minutes to set, and they turn out perfectly fudgey.
