Salmon, pumpkin and pomegranate glow bowl

๐Ÿงบ Ingredients

  • 2 salmon fillets (skin on)
  • 1/2 pumpkin, cubed
  • 1/2 cup pomegranate seeds
  • Baby spinach or rocket
  • Cooked grain of choice (rice or quinoa)
  • Olive oil, lemon, salt and pepper

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Toss the pumpkin in olive oil, salt and pepper and roast at 200ยฐC for 25 mins until golden.
  2. Season the salmon and roast or pan-sear, skin on, until just cooked through.
  3. Build a base of greens and grain, top with pumpkin and salmon.
  4. Scatter over pomegranate seeds and finish with olive oil and a squeeze of lemon.
