Protein Packed Caesar Salad

A protein-packed take on the classic Caesar โ€” roughly 47g protein and 560 cal a serve, with a lighter Greek-yoghurt dressing.

๐Ÿงบ Ingredients

  • 2 baby cos lettuce hearts
  • 2 large eggs
  • 2 slices bread, cubed
  • 2 shortcut bacon rashers
  • 2 small chicken breasts
  • Parmesan shavings, to top
  • Dressing: 1/2 cup Greek yoghurt, 1/4 cup finely grated parmesan, 1 tbsp lemon juice, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1 small garlic clove grated, 3 anchovy fillets finely chopped, 1 tbsp olive oil, black pepper, a splash of water to loosen

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Boil the eggs.
  2. Toss the bread cubes in a little olive oil and air fry at 180ยฐC for 6-8 minutes until crisp (or use the oven, adjusting time and temp).
  3. Air fry the bacon at 180ยฐC for 8-10 minutes until crisp, then chop into shards.
  4. Whisk all the dressing ingredients together, loosening with water until smooth.
  5. Cook the chicken โ€” air fry or pan fry โ€” until cooked through, then slice.
  6. Chop the cos and toss through most of the dressing.
  7. Top with croutons, eggs, bacon, chicken and parmesan; finish with pepper and a drizzle of dressing.
