Protein Packed Caesar Salad
A protein-packed take on the classic Caesar: roughly 47g protein and 560 cal a serve, with a lighter Greek-yoghurt dressing.
🧺 Ingredients
- 2 baby cos lettuce hearts
- 2 large eggs
- 2 slices bread, cubed
- 2 shortcut bacon rashers
- 2 small chicken breasts
- Parmesan shavings, to top
- Dressing: 1/2 cup Greek yoghurt, 1/4 cup finely grated parmesan, 1 tbsp lemon juice, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1 small garlic clove grated, 3 anchovy fillets finely chopped, 1 tbsp olive oil, black pepper, a splash of water to loosen
👩🍳 Method
- Boil the eggs.
- Toss the bread cubes in a little olive oil and air fry at 180°C for 6-8 minutes until crisp (or use the oven, adjusting time and temp).
- Air fry the bacon at 180°C for 8-10 minutes until crisp, then chop into shards.
- Whisk all the dressing ingredients together, loosening with water until smooth.
- Cook the chicken (air fry or pan fry) until cooked through, then slice.
- Chop the cos and toss through most of the dressing.
- Top with croutons, eggs, bacon, chicken and parmesan; finish with pepper and a drizzle of dressing.
