Nourishing white bean, kale and chicken soup

๐Ÿงบ Ingredients

  • 4 chicken legs (bone in)
  • 1 litre chicken stock
  • 1 can (400g) cannellini beans
  • Kale (measure with your heart)
  • Celery, carrot, onion, garlic
  • Fresh parsley + lemon
  • Good olive oil
  • Parmesan (optional but highly recommended)

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Sear the chicken until golden, then set aside.
  2. Soften the onion, celery and garlic in the same pot.
  3. Add the chicken back in with the stock and simmer 40-60 mins.
  4. Shred the chicken off the bone and return it to the pot.
  5. Stir in the beans and kale and cook for 5 more minutes.
  6. Serve topped with lemon, parsley, a drizzle of olive oil and a little parmesan.
