Nourishing white bean, kale and chicken soup

๐งบ Ingredients
- 4 chicken legs (bone in)
- 1 litre chicken stock
- 1 can (400g) cannellini beans
- Kale (measure with your heart)
- Celery, carrot, onion, garlic
- Fresh parsley + lemon
- Good olive oil
- Parmesan (optional but highly recommended)
๐ฉโ๐ณ Method
- Sear the chicken until golden, then set aside.
- Soften the onion, celery and garlic in the same pot.
- Add the chicken back in with the stock and simmer 40-60 mins.
- Shred the chicken off the bone and return it to the pot.
- Stir in the beans and kale and cook for 5 more minutes.
- Serve topped with lemon, parsley, a drizzle of olive oil and a little parmesan.
