Mediterranean tuna pasta salad

Save this for when you need a super easy, healthy, high-protein lazy lunch. The fibre hack is using chickpea pasta.

๐Ÿงบ Ingredients

  • 140g chickpea pasta
  • 1 tin good-quality tuna in olive oil
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/2 red onion, finely diced
  • A handful of Kalamata olives
  • Feta, to taste
  • A handful of chopped parsley
  • Dressing: 3 tbsp olive oil, juice of 1/2 lemon, 1/2 garlic clove grated, 1 tsp dried oregano, salt and pepper

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Cook the pasta to al dente, drain and rinse under cold water.
  2. Whisk the dressing together.
  3. Combine all the salad ingredients in a bowl.
  4. Add the dressing and toss through.
  5. Crumble the feta on top and enjoy.
