Mediterranean tuna pasta salad
Save this for when you need a super easy, healthy, high-protein lazy lunch. The fibre hack is using chickpea pasta.
๐งบ Ingredients
- 140g chickpea pasta
- 1 tin good-quality tuna in olive oil
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1/2 red onion, finely diced
- A handful of Kalamata olives
- Feta, to taste
- A handful of chopped parsley
- Dressing: 3 tbsp olive oil, juice of 1/2 lemon, 1/2 garlic clove grated, 1 tsp dried oregano, salt and pepper
๐ฉโ๐ณ Method
- Cook the pasta to al dente, drain and rinse under cold water.
- Whisk the dressing together.
- Combine all the salad ingredients in a bowl.
- Add the dressing and toss through.
- Crumble the feta on top and enjoy.
