Creamy Lemon Butter Beans with Golden Barramundi
So easy, and I'm not exaggerating when I say it tastes like something from a restaurant โ and it takes 12 minutes total.
๐งบ Ingredients
- For the beans: 1 tin butter beans (drained, reserve some liquid), 1 tbsp butter, 1 tbsp olive oil, 3 garlic cloves sliced, 1/2 tsp chilli flakes, zest of 1 lemon, juice of 1/2 lemon, 2 handfuls baby spinach, a handful of chopped parsley, salt and pepper
- For the fish: 2 barramundi fillets, olive oil, salt and pepper
๐ฉโ๐ณ Method
- Melt the butter and olive oil in a pan on medium-low. Add the garlic and chilli flakes and cook a minute until fragrant.
- Add the butter beans with a splash of the reserved liquid. Simmer 3-4 minutes, then crush about a third of the beans for creaminess.
- Stir in the lemon zest and juice, season to taste, adding a little water if it dries out.
- Air fry the barramundi at 200ยฐC for 8-10 minutes until it flakes.
- Fold the spinach and herbs through the beans until just wilted.
- Spoon the beans into bowls, top with the barramundi and finish with extra lemon and herbs.
