Creamy Lemon Butter Beans with Golden Barramundi

So easy, and I'm not exaggerating when I say it tastes like something from a restaurant โ€” and it takes 12 minutes total.

๐Ÿงบ Ingredients

  • For the beans: 1 tin butter beans (drained, reserve some liquid), 1 tbsp butter, 1 tbsp olive oil, 3 garlic cloves sliced, 1/2 tsp chilli flakes, zest of 1 lemon, juice of 1/2 lemon, 2 handfuls baby spinach, a handful of chopped parsley, salt and pepper
  • For the fish: 2 barramundi fillets, olive oil, salt and pepper

๐Ÿ‘ฉโ€๐Ÿณ Method

  1. Melt the butter and olive oil in a pan on medium-low. Add the garlic and chilli flakes and cook a minute until fragrant.
  2. Add the butter beans with a splash of the reserved liquid. Simmer 3-4 minutes, then crush about a third of the beans for creaminess.
  3. Stir in the lemon zest and juice, season to taste, adding a little water if it dries out.
  4. Air fry the barramundi at 200ยฐC for 8-10 minutes until it flakes.
  5. Fold the spinach and herbs through the beans until just wilted.
  6. Spoon the beans into bowls, top with the barramundi and finish with extra lemon and herbs.
