Burrito Stuffed Sweet Potatoes

All the burrito flavour, stuffed into a sweet potato, with high protein and leftover mince for later.

🧺 Ingredients

  • For the sweet potatoes: 2 sweet potatoes, olive oil, salt
  • For the mince: 500g beef mince, 1 onion diced, 1 can black beans, 130g tomato paste (1 tube), smoked paprika / cumin / garlic powder (about 2 tbsp each, or to taste), salt and pepper
  • For the guac: 1 ripe avocado, juice of 1/2 lime, 2 tbsp red onion finely diced, 1/2 small tomato deseeded and diced, a small handful coriander, salt
  • Toppings: Mexican cheese mix, Greek yoghurt, coriander to garnish

👩‍🍳 Method

  1. Prick the sweet potatoes all over, rub with oil and salt. Air fry at 200°C for 35-40 minutes, turning once, until a knife slides in easily (drop to 180°C for another 5-10 mins if the centre is still firm).
  2. While they cook, brown the mince in a pan, breaking it up. Set aside, then cook the diced onion in the same pan until soft.
  3. Return the mince with the black beans, tomato paste, paprika, cumin, garlic powder, salt and pepper. Stir and simmer on low.
  4. Make the guac: mash the avocado with lime juice and salt, then fold through the onion, tomato and coriander. Adjust to taste.
  5. Slice each cooked sweet potato in half lengthways and open up. Spoon the mince on top, scatter with cheese and grill ~30 seconds until melted.
  6. Top with guacamole, a dollop of Greek yoghurt and a garnish of coriander.
