Air fryer crispy beef tacos with spicy green dip
An easy high-protein, gluten-free lunch or snack with hidden vegetables and a spicy green dip.
🧺 Ingredients
- 1/2 avocado
- 1/3 cup Greek yoghurt
- Big handful of coriander
- 1 to 2 jalapeños
- Juice of 1 lime
- Salt and pepper, to taste
- 500g extra-lean beef mince
- 1 onion, diced
- 2 zucchinis, finely diced
- 2 capsicums, finely diced
- 130g tomato paste (1 tube)
- Smoked paprika, cumin and garlic powder, about 2 tbsp each or to taste
- 8 corn tortillas
- Shredded tasty cheese
- Spray oil
👩🍳 Method
- Brown the mince in a pan, breaking it up as you go, then set aside. Cook the diced onion in the same pan until soft.
- Add the zucchini and capsicum and cook until soft.
- Return the mince to the pan with the tomato paste, paprika, cumin, garlic powder, salt and pepper. Stir and simmer on low until thick, not saucy.
- Sprinkle cheese on each tortilla, add mince to one half, fold and press to hold the shape.
- Spray with oil and air fry at 200°C for about 10 minutes until crispy.
- Blend the avocado, Greek yoghurt, coriander, jalapeños, lime juice, salt and pepper until smooth. Add water to thin if needed.
- Serve the crispy tacos with the spicy green dip.
